Barbera: dried herbs, black pepper, blueberries, cherry
Chardonnay: yellow apple, pineapple, starfruit
Nebbiolo: rose, cherry, anise
Arneis: peach, yellow apple
Dolcetto: blueberries, violet, black pepper, plum
Cortese: apple, lemon, seashell, honeydew lemon
Grignolino: violet, dries herbs, blueberries
It's tied to what vineyard they are in, and since it seems to differ from seed to seed*, it's either also tied to the game seed or it might be tied to the terroir properties.
The initial data has been taken from the perfect terroir seed, but checking other games, the flavour/grape combos seem consistent, i.e. you can't get red apple for Dolcetto.
More data would be required to confirm that but I've spent enough time plant-space-space-check yeast-reload to do more checks on different map seeds.
*For example Arneis might be peach in Casot in one seed, but yellow apple in another seed's Casot.
