Baguette recipe for Russian

How to make the best baguette like in France

Ingredient:
  • 375 g of type 55 wheat flour

  • 215 g of water

  • 7 g of fine salt

  • 5 g dry baker's yeast

    Preparation:
    1. I warm the water (around 40 ° C).

    2. In a bowl, I mix the flour, salt and dry yeast. I pour lukewarm water and work it together for 5 minutes until I get a smooth ball.

    3. I cover the bowl with a tea towel and let stand for 40 minutes at room temperature, away from drafts.

    4. I work the dough to degas it then divide it into 3 parts. I roll each part into a cylinder, a little longer than the impressions of the baguette mold.

    5. I flour the inside of the mold and arrange the dough cylinders in each cavity. I let stand 20 minutes at room temperature, away from drafts. I preheat the four to 250 ° C.

    6. I brush the tops of the chopsticks with water, making sure that there is no water between the dough and the pan, which might weld the chopstick into the indentations.

    7. I make fairly deep incisions on the top.

    8. I put in the oven and cook for 25 minutes at 240 ° C.
