The window display is to you sell for customers that don't want to order, it's a way to get more money in the end of day, I agree, isn't the best upgrade but it helps you to get more money from the rush and starving crowd.

Yes, where you can read the customer orders have a bar with 3 colors for every single order, from left to right: dark yellow, green, (and at very end) blue.
-dark yellow is for customer getting upset and leaving without eat;
-green for good order;
-blue for perfect order.
Also, blue gives to you a bit more tips. But you don't need to rush out every single order looking for blue, something that I like to get it perfect is give a coffee when the bar is green or dark yellow and just together they order.
1- " the oven upgrade make the ovens cook faster? it says it burns pastries more slowly and I'm pretty confused.."
So, the oven doesn't cooks faster but when your recipe is ready it takes longer to burn out, It's quite good for rush time. (also, every single pastry show it's cook time when you're building your menu for the day)
2- "how do you get customers to adopt the cats?"
In bon's tips she says petting every cat increase the chance for adopt it, almost everyday they adopt every cat from me, sometimes in the end of day there is only a single one.
