The spider wasn't a problem, Erik and Veronica pretty much nuked it by themselves.
Overweening Pride was predictably tough though, and forced me to alternate between Serena and Eight using Kerplunk which felt cheesy. The Fifth Harma trial was a bit annoying because of "No Fleeing from Battle", I had to just let them kill me whenever I wanted to retry.
You have to consider all of your options more with these restrictions.
A lot of enemies are perceptible to Dazzle and/or Sleep, which can buy you a lot of time. Buffing+Debuffing is basically required for some bosses, and it can make sense to bring multiple characters into pep ahead of time to start difficult fights with something like Arise+Yggragon's Blessing.
I also figured out the Hallelujah/Electro Light XP grind during Act 3 and was around level 80 for most of post game, that probably helped a lot.
There were a few bosses that were absolutely infuriating though, Rab in Act 2 almost made give up on the whole thing, and Jasper Unbound was a lot more difficult than he had any right to be(though I did learn that I was supposed to be like 15 levels higher for him). Both of those fights were basically just down to luck which never feels good, and for Rab you need A LOT of luck.
Rather than difficulty, my biggest problem with 6x Draconian is the loss of core mechanics. "No Shopping" means gold is largely worthless. "No Armor" means a huge part of character customization goes down the drain, and appearance alteration go right with it. Also no shields. The whole experience feels a bit more shallow.
The way you played the game was probably optimal.
