My small introduction
Hello there, and welcome to my very first try to make something useful. This list contains boulders, their basic stats, preparation time, ways of obtaining and if those were available in the previous games.
This list will not include the dummy boulder from the Level Editor, the Bomb from Time Trials and boulders from Avalanche mode.
First of all, about preparation time, some people miss the key to victory. Each boulder needs time to get ready to roll, and the first boulder of the battle needs much more time. If a boulder gets destroyed, the next one gets ready faster. All boulders can be classified into 4 groups by their preparation time: very fast, fast, slow and very slow. Mostly, the more powerful the boulder is, the more time it needs. Here is a little table for the approximate timing in seconds.

"Friend of Sisyphus and Atlas, a well-rounded boulder!"

This boulder is our main character, the friend of Sisyphus and Atlas now travels with Elpenor across the eras. This boulder is never a bad choice: it's pretty tough and has high damage.

Lion Boulder


"Just as tuff as the next rock."

The friend of Charlemagne and Richard the Lionheart is back and ready to destroy. It deals a bit more damage than Rock of Ages, but ironically, less tough.

Medusa's Boulder


"Comprised of 100 petrified soldiers, neatly packed into a ball."

Why would anyone need to carve a boulder when so many people challenge you? Medusa's masterpiece is a bit more tough than Rock of Ages, but a bit slower.

Block of Ages


"Doesn't roll very nicely, but always does full damage. It shakes the very earth when it lands."

Block of Ages once got added in the first game as an April Fools joke. Now it's an inherent part of the series. As the description says, this one is very hard to roll, because you can't roll it. Instead, it jumps and spins in the air. Damage dealt by this block is enormous, even on lower speed - you can just put it near a gate an tickle it, and the castle loses a half of it's health! Damage taken by the block still decreases the damage it deals. It can also deal damage to other boulders, shattering them in pieces, but it's low speed and shape make it useless for all modes but War. Block of Ages can't be affected by sticky cows or lion balloons.

Armored Boulder


"Armor provides additional strength. It's extra weight comes in handy if it is attacked."

This boulder is the best pick against enemies who put a lot of explosives and other damaging units on the battlefield. It deals good damage and very hard to destroy, but not so fast.

Globus Crusiger


"Earn additional gold from destroyed enemies if you can bear the cross."

When the description says "Bear the cross", it literally means it. This boulder has a cross which can make it hard to roll and lower it's speed, but it falls off after touching the ground several times. The amound of gold you earn for destroying objects varies. As an example, you earn 10 by rolling a person, +-150 for a ballista and +-200 for a Da Vinci tank. You also earn gold when you destroy decorations.

Gunpowder Boulder


"Explodes when it's fuse is hit several times. Can do massive damage."

Be careful with this boulder, it's always ready to blow up! It's fuse gets touched not only by enemies, but by the floor, so it can explode while just rolling. This boulder is great for cleaning areas with a lot of enemy units, as the range is good. The explosion, as far as I know, won't destroy decoration items. It also blows up when destroyed or when touches the gate, so be ready - if you destroy the castle's gate with this boulder, you will have to wait for the next one to finish your enemy!

Fire Boulder


"Great balls of fire do additional damage!"

Not surprising why this boulder is a fan favourite - it has enormous damage potential. It's still pretty easy to destroy it.

Angel Boulder


"It's magical wings allow it to double jump."

This boulder has pretty weak stats, but hey, it has wings! They allow it to reach the distances and places, unable for other boulders, which especially helps in Obstacle Course. Note that these wings have a 7-second cooldown. You can always see when the boulder can double jump - if it has a nimbus above it, it's ready.

Globe


"It's satellite can damage nearby obstacles."

This tiny planet is good at destroying multiple targets, as it's Moon wipes fragile units away. It can be also helpful if you get stuck among towers or other units or decorations.

Sand Boulder


"It is affected less by projectile knock back and erodes gradually when damaged."

I can't add much here, the description says it all. I would still add that the boulder becomes faster when erodes.

Prehistoric Wheel


"Very difficult to maneuver, but can reach high speeds."

Despite this boulder being the fastest in the game, it isn't the most comfortable option for racing - on a turn it can fly away down the cliff or just fall on it's side, so it will need more time to get up. It's form makes it easy to avoid many obstacles, and moreover, the wheel can't be affected by sticky cows and lion balloons.

Tar Boulder


"Jump to stain the enemy battlefield. Defensive units cannot be built on stained tiles."

This boulder is one of my personal favourites in War - it deals good damage and has a fast recovery. It isn't that tough, but to protect itself, it doesn't let the enemy build on the areas when the boulder jumps. After a jump the boulder needs a couple of seconds to get ready for staining again. The tiles don't become clean with time, but can be cleared by Phoenix Trees.

Fist Boulder


"Land with the fist aligned to the ground to produce a small shockwave that damages nearby units."

The shockwave doesn't have a very good range, but it easily destroys fragile units such as ballistas. It doesn't damage decorations though. Note that this boulder doesn't create a shockwave every time it lands.

Balloon Boulder


"Can jump much higher but is considerably weaker."

This boulder is made for distance, not strength, so it can easily jump over obstacles. The description says "Higher", but the main thing is "Longer", so it can fly long distances and get to the finish faster. But remember, it flies slowly, so units which shoot at the boulders can easily get at it, and if the boulder gets off the map, it will need more time to respawn.

Cow


"Inflated bovines are just as effective as balloons."

Sometimes bad dreams come true. Cows are stronger than Balloon Boulders, but a bit more heavy.

The guest of Halloween updates now made it with the release. Works just the same as the Gunpowder Boulder, with it's pros and cons.

Snowball


"Slowly melts down, but has great knockback resistance and controls better than other boulders on ice."

This boulder takes small damage over time while it rolls and becomes smaller and faster when gets more damage. The carrot nose works like a cross of a Globus Crusiger, but falls off much faster. Snowball can not be frozen by yeti.

Cheese Wheel


"You can never go wrong with cheese."

The absolute fan favourite for Obstacle Courses. Cheese Wheel is a weaker version of Prehistoric Wheel, but easier to maneuver. It also cannot be affected by sticky cows and lion balloons.

Sheep Lump


"A big mass of sheep. The reduced weight makes it lighter than other solid boulders."

Polyphemus's pets will now help us to escape from him! This boulder is my personal favourite in Skee-boulder, because it jumps higher, but lands fast, so it can easily get the higher scores.

Humpty Dumpty


"Humpty Dumpty sat on a wall, Humpty Dumpty had a great fall."

As an egg, Humpty Dumpty is very fragile-two hits are enough to crack him. It can double jump with no cooldown and slow down all projectiles fired at him. On high speed he can deal +-10 damage to the enemy's gate.

Meatball


"Unlike other boulders the giant meatball gains mass and power as it rams in to obstacles."

These boulders make me feel hungry. On full strength, Meatball only deals +-150 damage, but as they get hit, they become larger, slower and deal more damage.
P.S. Thanks to Endless_Circuit for noticing that this boulder doesn't work as intended. It gets both damage buffs and debuffs when loses HP, so as a result, they just suffer less from getting damaged than other boulders, dealing +-130 damage with almost no HP.

Easy and cute. Happy Boulder is a bit slower and heavier than Rock of Ages, but recharges faster.

Retro Boulder

Just another little weird thing. This bouder's stats are absolutely equal to Rock of Ages.

How to unlock: Unlocked by default for all players who played the Closed Alpha (if you don't have this boulder, but participated in the Alpha, create a level in the Level Editor, upload it, then go to Community Levels. After that you should get your boulder.)
Paint Boulder


"Leaves a trail of paint on which units cannot be built. It quickly degrades over unused tiles."

Added in Patch 1.07. A boulder which used to be unplayable for real players, but some AI enemies could use it. It doesn't need to jump to stain the tiles, it just rolls and leaves a long track, which can be annoying if you want to build large units on thinner places. However, this trail can be cleared by Phoenix Trees.

Hot Potato


"The fastest way to get rid of this potato is to smash it into your enemy's gate!"

Added in Patch 1.07. Stats of this huge hot potato are mostly equal to Jack-o'-lantern, but with speed differences: the potato rolls slower, but recharges faster. Just like Gunpowder Boulder and Jack-o'-lantern, this boulder explodes when it touches the enemy gate or gets destroyed, but unlike them, it can't blow up while rolling or destroys the gate, which makes it a much more safe version to use at War (thanks to Mr. Bummy Diddles for noticing the "safe destruction"). Potato's shape can make the rolling a bit harder for the first few seconds

Humpty Dumpty's double jump can climb the cliff at the start of the India obstacle course, which basically hands you the match on a silver platter.

There's probably plenty of other cheesy shenanigans Humpty can get up to, but I haven't really found them yet :/

in my opinion i think the cube boulder is a good "starting" boulder for war, example, you use the cube boulder at the beggining to deal damage to the castle gate, and then you use another ball thats quick to recharge (example: happy boulder or regular boulder) to continue dealing damage

I don't think that any boulder is just the best at everything, but my personal pick is Happy Boulder, mostly thanks to it's fast recharge.

Looks like it. Just ran a little test with the Meatball losing health and got these numbers for equal speed:
15% HP loss-151 damage
40% HP loss-150 damage
70% HP loss-138 damage
95% HP loss-131 damage

I have one possible assumption about this weird issue with meatballs. There is a factor that decrease damage of other boulders as their health goes down. Probably another system is applied to meatball to increase it's damage when their health lowers. Probably the devs have mistakenly applied both of the systems to the meaty sphere as you can see the damage of it did not change a lot at full and little health. Yet when the same thing happens to other boulders their damage usually decreases a lot more.(for example,230± to 140± for lava boulder and 195± to only around 110 for default boulder)

Did a test with an self-built map on Damage of meatball of different health values on the Enemy Gate.
It turns out that he full-health meatball do have around 150 damage at full speed.
When it reaches around half health, the damage actually seem to decrease a little bit (145± in my case) instead of increasing as described.
I repeated it with those giant meat lumps with only dashes of health left and this time the average damage was only 125±
In all of these experiments I used an cannon to fire all the meatballs of different sizes and smash it directly to enemy gate (all the meatballs enters the cannon slowly) so the speed of them should be about the same.
This result seems to be contrary to the description and weirdly there seems no possible way to deal 200+ damage as it is shown in the description.
