General Progression
Posters #1 through #8
These are awarded after reaching a certain number of products, while also not failing to bring the products in during your allotted time.

Poster #1 - 28
Poster #2 - 48
Poster #3 - 68
Poster #4 - 88
Poster #5 - 108
Poster #6 - 128
Poster #7 - 168
Poster #8 - 188

For example, if you fail a round when you have between 68 and 88 products, you won't get Poster #4, but you can still get Poster #5 if you succeed while you have 88 to 108 products.

Dungarees
This is awarded after buying the last unlockable item, and is purely cosmetic. It costs 96 stars, so make sure to always serve the customer who has the most stars first.

Clocking Off
Awarded after beating the game on any difficulty.
Collections
All of the following achievements are awarded after collecting FOUR items in a given category, and placing them next to each other. While some of the categories contain more than four items, you only need four of the items for the achievement to pop.

Also note that this game contains 501 items, but you will only see 200 in a regular game, meaning that you may have some difficulty obtaining some of the achievements, as it will boil down to getting lucky with which products you're given.

The items you can use for each achievement are as follows:

Astronomy Achievement

The Music Achievement

That Wheels Achievement

The Banana Collector

Got Apples!

All The Camels

(Yes, "All the Camels" and "Got Apples!" share a product.)

Pattern Recognition

Quatro Formaggi

The Haberdashery Achievement

The English Collection

Mr Bricolage

Origin of Species

Cryptozoology
Collections Continued
HATS?!

Arboretum

Sports.

Man's Best Friend

Get In The Sea!

Amateur Pharmacist

Insects Are My Friends.

The Secrets Of Wind

The Time Achievement

Note: When placing the items next to each other, there does not seem to be a specific order or configuration, so long as the four are connected in some way. For example, I was able to get achievements to pop with each of the following configurations:
Notes
A method I used to get the last few achievements I needed was to start a new game and see if the initial products available were in one of the collections I needed. If this was the case, I'd often only have to play a couple rounds into the game to get four of the items in that collection, since the game generally gives you new products that are within a collection you already have items in. Then, you can delete the save and restart till you find items within the next collection you need. Also note that you can skip the tutorial by going to the menu (pressing escape) while in the tutorial.

If you're interested in finding out what each item is categorized into, including the items that are not listed here and do not fall into any of the achievement categories, you can check out the files by going to C:\Program Files(x86)\Steam\steamapps\common\Wilmot's Warehouse\WilmotPC\img\tiles

Also, if you're not interested in going through multiple runs of the game in case you don't get all the items you need, there seem to be some work-arounds by changing some of the game's files. You can check these out in more detail in J_God_Yamaxanadu's guide: https://gtm.steamproxy.vip/sharedfiles/filedetails/?id=1854415481

I don't see it mentioned anywhere, but the config.xml has a section <TAGS> that says

<TAG name="bananas" requiredYear="2"/>
<TAG name="finches" requiredYear="2">

Trying the save reset method was not getting me either the finches or the bananas until I deleted these lines. I assume they force those groups to only appear halfway through a playthrough for some reason.
