TL;DR: death defiance is better if bosses are giving you trouble, stubborn is better if you are having trouble clearing regions to get to the bosses.
I'm still beginner-ish and found stubborn defiance useful, though I'm at the point where death's is better. Death defiance is better the better you get, bc it gives you more health in tough fights (150% vs 30%). If you are consistently getting to the boss without dying death defiance is better. If you are having trouble clearing regions though, stubborn defiance may be the way to go as 30% per room is often enough to get you to the next door. If you use it in 6 rooms it's more efficient.
Also to max efficiency on stubborn defiance you should try and suicide if it looks like you will clear a room with less than 30% health, though this can be risky if you misjudge when the last wave is.
