After an intense bit of research this seems to be the only way to change FOV in this game.
To do this one needs to enable the Unreal Engine Developper Console
Download Universal Unreal Engine 4 Unlocker from the link pcgamingwiki then point it to the moons of madness executable (in the sub directory SteamLibrary\steamapps\common\Moons of Madness\MoonsOfMadness\Binaries\Win64
Once in game hit ` or ~ depending on your keyboard and enter the command FOV followed by your desired number.
