Use the FLAT sides of the blades to deflect or bat the bomb back, or you can catch the bomb with the flat sides of your blade and throw it back.

This will take some time and patience.

The more enemy basket copters there are, the more likely you are to destroy one with a deflection.

I managed to get it in one hit! I had no idea of how to break them before I read this too.

Yes, it has to be a direct hit. I have been able to get it on 2-3 bomb bounce backs. It depends on how direct the bounce back is.
