Pressing up against opponents will cause your character to perform safer and quicker attacks with mildly less power but doesn't result in you being buttfucked or not getting anything done. If your being thrown often then you should try pressing "grab" every time you attack to predict-counter any throws but don't do it during the windup of an attack because that'll result in a "feint". For longer range you should just do forward kicks which requires that there's no movement input at all.
As for the dodging, for now, tap your movement keys until your brain just gets gud. You have to move away from the trajectory of swings too due to the way hitboxes in Overgrowth works. So long as your character faces your opponent while moving it'll dodge so don't activate the running animation.
