What program did you use to extract the meshes Kyle? Also what is the format of these meshes after extracted?

I figured it out, had to extract the meshes from the DAT files.

Up to you but I've been trying to figure out how to extract the models myself to make mods, would you describe your method of doing so, or is this from editing the K2a files?

It's a mod, I extracted and modded the texture. I'm going to do the same for several other characters and in-game illustrations/interface elements and release it as a bundle.
