The only reason I'm writing this is because it took me an extensive amount of time to find and didn't remember this ever being disclosed within the game.

All that you need to do to change your pronoun is click the nameplate on the desk of your "gentsona"
To get to this menu either click the button in the bottom right of the main screen or press O on your keyboard


Clicking here will cycle through the various options.
