Basic Moves
Stamina
Stamina bar is at the bottom right of the screen, as seen here:

Any move (Flap, roll, dive) costs stamina.
To gain stamina you can pick up the various food items (seeds, flowers, fruits), each will give you a bit.
Another way to to top up is by landing on a platform - this will quickly recharge to max.
Landing anywhere on the ground will charge stamina slowly.
If the stamina is depleted, you will not be able to fly - just land and wait to charge.

Pickups
The following pickups are available as food items. Each pickup will increase the stamina by a different value.
-

Flying
Hold down the right trigger / K key to flap while pointing right or up with the direction keys / left stick.
While flying, flap to gain power and point to the direction you want to fly. Speed is maintained by a combination of flap and point forward. To slow down, ease on the direction and/or stop flapping.

Glide
To Glide, gain speed and then release the flap key / trigger while keeping the direction stick (or keys) pointing forwards. If you lose too much altitude, start flapping again.

Roll

Hit the Ctrl key / X botton on gamepad to perform a barrel roll. Roll will also help you evade obstacles like geyser stream.

Dive

Hold the dive key (Shift) or left trigger (LT) to perform a dive stunt - then release to complete the dive. This requires a bit of practice.

Landing and Flock
Landing
You can land anywhere by getting close to the ground and holding the L key or B button on the Gamepad. Once on the ground, you can walk on both directions.

Landing platforms are placed on some of the checkpoints, and serve as rest stop. Land on a platform to recharge your stamina.

Honk
You can honk with the Space key or A button. Honk is used to call other birds.

Flock
Flock birds are marked with a bubble around them. Call them by honking and one of them will join you. Once a bird joins your flock, it will follow you until you reach the end of the chapter.
Flock birds are used to unlock challenges in the game - each challenge would require a different number of birds.

Characters
LandSquid
The Landsquid hunts with its tentacles. If you pass too close it will attack you.

Coyote
The coyote is hanging out at the back. It will come close if you stand on the ground for too long and will try to chase you.

Challenges
A challenge is marked by a circular ‘flag’ as seen here.
Each is locked and requires a certain number of flock birds to unlock. The number is displayed on the top of the flag.

Once unlocked, pass through it to activate. A series of hoops will appear ahead. You need to fly through each of the hoops in sequence to pass it. If you miss, fly back and retry. Skipping a hoop is not possible - you need to activate the one before it first.
Note that hoops will only work on the right direction (forwards).

When the final hoop is activated, it will switch or move a rock to clear a passage - a short sequence will follow to show the impact.
