An Age of Empires wiki notes that "Aztec units are supposed to speak Classical Nahuatl, but the in-game voices are not even close to any dialect of Nahuatl", and suggests that the units are speaking a Mayan language.

The Mayan units themselves speak K’iche’ but have different speech files to the Aztecs, so it's not clear if the Aztecs are speaking an earlier form of Mayan (like Qichean) or a different branch of the Mayan language altogether. I haven't been able to find proper translations the words.

Before 2000 BC, the Maya spoke a single language, but this broke into over 30 languages that have survived into modern times. An Age of Empires wiki notes that Mayan units speak K’iche’, which is one of those Mayan languages, and is still spoken in modern-day Guatemala. K’iche’ branched out from the Qichean language around the time of the Spanish conquests in the 1500 and 1600's.

The Qichean launguage itself was spoken throughout the Age of Empires II timeframe (Age of Empires II apparently starts at 400 AD). I haven't been able to find proper translations the words.

An Age of Empires wiki notes that Spanish units speak Early Modern Spanish, which would place it between the 15th century to the 17th century. But the timeline for Age of Empires II (the Middle Ages) is a little earlier, encompassing the 5th to 15th centuries.
