Changing your response curves
Response curves dictate how the planes react to your joystick or controller input. You can use them to make the planes' controls less sensitive, or to counter excessive nose-up tendency. You can set them up inside Rise of Flight. The video below explains how to do this.

I honestly never needed to adjust the response curves with my joystick. The only adjustment I used was to enable the "Smooth" option which makes the aircraft not so over reactive to control and more realistic feeling.

Awesome. I was it was easier for my feeble brain, but I hope this helps with some of the aircraft that seem to just want to nose up and fly into the sun with a centered joy stick.
