The title and description say it all, but I want to add that this is my first guide on here. Hopefully you find it informative and helpful. Enjoy.
Accessing, Converting, and Placing Your Song(s) Into the Game
NOTICE: If your CD import settings are not set to MP3 Encoder, the "Create MP3 Version" option will not be available. To enable creating an MP3 version, go to Edit > Preferences > General Preferences > When You Insert A CD > Import Settings > Import Using > Select MP3 Encoder!

In order to use any purchased music from iTunes in ETS2, you must convert it to an MP3 for the game to be able to read it. To do this, go to iTunes and find the song(s) you purchased and want to put in the game. For this guide, I'll be using one of my favorite Tom Waits songs, "16 Shells From A Thirty-Ought Six."

After selecting your song in iTunes, right click on it, click on "Create MP3 Version" and wait while it converts. You'll hear a little tune play telling you it's ready. If you have done this correctly, your song list should have 2 of that song now, like the image below will show:

After you have converted your songs, right click on one them (it doesn't matter which one, the MP3 version should be in the same location as the iTunes .m4a version,) click "Show in Windows Explorer" and you should see the directory where the original and MP3 files are placed, like this (the MP3 is the bottom file; if it's not, a quick click on the file will tell you its format):

Now open up your Euro Truck 2 folder in "My Documents" and open the "music" folder (it'll be empty if you haven't placed music in there before). Take your MP3 file and place it in the "music" folder, now it should look like the image below:

Your song will now be able to play when you start up the game and access the music player, which should look like this:

To play the song, just click on it twice or select it, press the little play button at the bottom of the player, and you should be good to go with your own driving music!
Renaming the Song(s)/Extra Tidbits of Info
If you don't want the track number to be shown on the file in-game, want it to show the artist, showcase your love of burritos or whatever, just change the file name to whatever you want. I recommend changing to something like this however: "16 Shells From A Thirty-Ought Six- Tom Waits."

Here's how it looks with the file name changed in-game:

You can delete the MP3 copy you made off of your iTunes library, as iTunes will ask for the location of the file since it was moved from the old directory.

This process can obviously be done as many times as you like with purchased iTunes music.

I use Apple Music. Songs I have purchased I'm able to convert but songs I've downloaded through Apple Music I'm unable to convert. What could I use as a compromise?

Sorry for being 4 years late as I just got the game recently

Yes, in fact the method is quite similar but doesn't need iTunes or an MP3 player if you don't have them. All you need to do is convert the songs you want to put in ETS1 into OGG format and drop them into your ETS music folder, which is located in: My Documents\Euro Truck Simulator\music

As for converting your music into OGG format, I recommend CloudConvert, as you don't need to download anything and it's easy to use. There's a limit of 25 conversion minutes (you can convert as many files as you want so long as the total time it takes for all the files you upload to convert does not exceed that amount), but it works fast and I can get a fair amount of larger songs converted on a good day.

Would I be able to put music in the original Euro Truck Simulator? And if I can, would I have to do it the same way as this? I don't have an MP3 player or iTunes. So would those be a must to do this?

LEVA49, you have to set your CD import setting to MP3 encoder or else the game won't be able to read the song. In iTunes, go to Edit > Preferences > General Preferences > When You Insert A CD > Import Settings > Import Using > Select MP3 Encoder.
Here's an image for clarification (I'll add it to the guide as well): http://i.imgur.com/I3lMwcP.png

Elite_Rage, set your iTunes music tab to view albums, right click on the album, and click "create MP3 version." That should convert the entire album and give you an MP3 version of each song. After that, switch iTunes back to view songs and the MP3 copies should be below the original files. If you're unsure of which song is which format, right click the song and click "Get Info."
