Nah, its very clear when you get hit. I would rather have people who don't pay attention not realize they took a hit, than be annoyed by hit stop because other people need a handicap.

The video raises some goods. I love the game to death (pun intended) but the feedback on hits always felt a little weak. Let's hope that the upcoming DLC wil improve in that regard as well.

Combat in Western games always feels weak and floaty, because (1) there's no hit stop and (2) interpolation between key frames just defeats the object of inertia. If hit stop was added to a horribly interpolated game like For honor, the combat would only be subtly improved. Hits would still look and feel like the weapons are made of foam. However, Death's Gambit is a pixel art game so its combat can be dramatically improved with hit stop.

Dark Souls 3 has a very slight "hit stop" effect, and I wished it would have been more exaggerated. For example, charging R2 with the Great Club and having it "hit stop" on impact, before sending the enemy flying. I think it was "Sword of the Berserk" on Sega Dreamcast that has the "double hit stop" effect, where you would swing the blade and a hitstop effect would trigger twice, which was absolutely brutal when the sword smashed through, cutting a monster in half in a shower of blood.
