First, you can only use the maps that you created or subcribed at when you're the host of the match (online or local). Second, you need to go in OPTIONS and there should be an option called MAPS and a button EDIT on the right. When you click on it, you should be able to activate or desactivate your maps and also the maps that are already in the game. So, if you want, you can play with only the maps that you subscribed at.
