Zoltan isn't missable. Since some patchm if you don't play with the scholar, you can find a copy of Zoltan under the hanged man's tree in Velen.

i want to add to this.
i missed several cards for sooooo long, because i didn't realize, until i got to the gwent tournament in toussaint, that the innkeep in white orchard sells some
