It's not really that clear though and can be a bit inaccurate since the worlds are layered while the map is not, and some like the Armory has a banner but doesn't appear in Far Tower map, which is the map that opens when you're in the area.
I would play only in VR to finish those 3 hardest achievements.
For "Like a Ghost", the only alerted enemies that void the achievement are Rat Guards. Getting caught while wearing the full Red Ranger outfit, even if you get sent to jail, does not count. Alerting spiders and catacomb worms does not count, and (spoilers) as far as I can tell, the skeletons in the final mission have wall hacks and can literally phase through terrain. They don't count.
For "Crash Diet", just don't eat anything from your inventory, at all. Eating bread/porridge from Ouma Reizza via dialogue is fine, and healing via level up is fine.
