I actually did beat the game today, but I had to buy the easy mode. I played as Gal the whole way through but I'm thinking maybe she's not my best character.

I don't remember dying or using continues being an obstacle to get any ending.

If you're dying that much tho, it's not guaranteed you'll see the end in the first place, as Death Island have a pretty long section in which, if you lose and have to use a continue, you'll be back at the beginning of the level.

You may want to have a look at a gameplay guide, and maybe use the training mode.

Do deaths and difficulty affect the ending? Like, dying a lot on easy mode?

If you mean the one you see killed by the two boss cats, you can't.
If you mean Iris (girl in blue, after rat biker boss) you simply join her by going toward her.
