Anyway, in the end I made the note since plenty of other specialty shops would cross my mind for a skyscraper before I'd think of a cheese shop - hence I expected a specific reason, such as more smell.
And never were.
Those shops here in the Netherlands, France, Germany, Italy etc. are not dairy shops, they're cheese shops: they specifically focus on cheese. The mold on various types of cheeses produces pungent smells but also the typical flavours. You can easily find that many cheese enthusiasts agree on the common saying: 'the smellier the cheese, the better the flavour'.
Go on, Google 'cheese shop' and smell the images.
However, I do believe you when you say that in the US they’re more like dairy shops, as they aren't in general familiar with such a wide variety of cheeses. Which makes my case that their choice to have a 'cheese shop' in Miami is utterly random even more solid.
