250 gr flour
2 ½ tsp baking powder
2 egg yolks
30 gr sugar (more if desired)
1 tsp vanilla extract
½ tsp salt
250 ml buttermilk
50 gr butter
2 egg whites
3 teaspoons blue spirulina
Put the baking powder, flour, egg yolks, vanilla extract, sugar, salt and buttermilk in a bowl. Beat to a smooth batter. Melt the butter and mix it into the batter. Take another bowl, which is grease-free, and beat the egg whites to soft peaks. Be careful not to beat them too far.
Carefully spatula the beaten egg whites through the batter. Then stir 3 teaspoons of blue spirulina into the batter. Stir well. After this, you will have a blue batter.
Heat the waffle iron and grease it with butter or baking spray. Spoon the waffle batter into the waffle iron. Let the waffles bake for about 4 minutes. Then garnish them with blueberries, blackberries, powdered sugar and whipped cream.
