Stinging Nettle and Lemon Cake (Vegan)

Ingredients:
- 1 cup fresh stinging nettle leaves, finely chopped
- 1 3/4 cups all-purpose flour (gluten-free if needed)
- 1 cup sugar (or alternative sweetener)
- 1/2 cup unsweetened applesauce
- 1/3 cup vegetable oil
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Zest and juice of 1 lemon

Instructions:
1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
2. In a large bowl, mix together the flour, sugar, baking soda, and salt.
3. In another bowl, combine the applesauce, oil, lemon zest, and juice. Stir in the chopped stinging nettle leaves.
4. Add the wet ingredients to the dry ingredients, stirring until just combined.
5. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
6. Let the cake cool before slicing.
