1/2 cup melted butter
4 packages (8 ounces each) cream cheese, softened
1 1/4 cups granulated sugar
1 teaspoon vanilla extract
4 large eggs
2/3 cup sour cream
2/3 cup heavy cream
Instructions:
Preheat Oven:
Preheat your oven to 325°F (163°C).
Prepare Crust:
In a bowl, mix graham cracker crumbs with melted butter until well combined. Press the mixture into the bottom of a springform pan to create the crust.
Bake Crust:
Bake the crust in the preheated oven for about 10 minutes. Remove and let it cool while preparing the filling.
Prepare Filling:
a. In a large mixing bowl, beat the softened cream cheese until smooth.
b. Add sugar and vanilla extract, continuing to beat until well combined.
c. Add eggs one at a time, beating well after each addition.
d. Mix in sour cream and heavy cream until the batter is smooth and creamy :).
Pour the cream cheese filling over the cooled crust in the springform pan.
Smooth the Top:
Use a spatula to smooth the top of the cheesecake batter.
Bake Cheesecake:
Bake the cheesecake in the preheated oven for approximately 55-60 minutes or until the center is set and the top is lightly browned.
Cooling Process:
Turn off the oven and crack the oven door open. Allow the cheesecake to cool in the oven for about an hour. Then, transfer it to the refrigerator and let it chill for at least 4 hours or preferably overnight.
