Coloque o leite ao lume com o pau de canela e a casca de limão e deixe ferver. Deite o arroz num tacho, cubra com água e tempere com uma pitada de sal. Leve a lume brando até evaporar a água. Vá adicionando o leite bem quente, a pouco e pouco, à medida que o arroz o for absorvendo, mantendo sempre o lume brando e mexendo de vez em quando. Quando o leite acabar e o arroz estiver bem cremoso, junte o açúcar e mexa, deixe ferver mais um pouco, cerca de 2 ou 3 minutos. Retire do lume e junte a margarina.
