Rhubarb streusel sheet cake

Ingredients
1 kg rhubarb
700 g flour
650 g sugar
500 g butter
50 g starch
¼ tsp vanilla extract
whipped cream

Utensils
2 ovens, stand mixer with dough hook, 1 Nudelholz, parchment paper, baking sheet, cutting board, knife, bowl

Steps:

1. Preheat oven to 180°C/355°Freedom Units. Add flour, some sugar, and butter to the bowl. Mix until a crumbly dough forms.

2. Halve the dough and let one half rest in the fridge. Roll out the second half of the dough between two sheets of parchment paper with 1 Nudelholz, until it’s the same size as your baking sheet, then transfer the dough to it.

3. Peel and chop rhubarb, then add it to a bowl. Add remaining sugar, starch, and vanilla extract and mix. Transfer the rhubarb mixture to the baking sheet over the dough.

4. Remove the second half of the dough from the fridge and crumble it on top of the rhubarb. Bake at 180°C for 45 min until the crumbles are golden brown.
