主要材料为土鸡,大量指天椒干和花椒(比例4:1)。辅料有葱段姜片蒜片,油,料酒,盐,黑胡椒粉,五香粉,酱油,白糖等。鸡剁成小块后用料酒,糖,盐,五香粉,酱油腌制半个小时。腌好后取炒锅,倒油,油量以没过鸡块为准,油7成热的时候倒入鸡块炸至金黄捞起待用。另起一锅倒入比平时炒菜多一些的油,将干辣椒和花椒炒香后迅速加入葱姜蒜,鸡块大火翻炒。最后调味出锅即可。
这道菜的特点是,麻辣中透着鲜香。盘子里的干辣椒看上去要比鸡块多,鸡块外焦里嫩,麻辣可口。食客吃这道菜就是在享受辣椒中寻找鸡块的感觉。
本菜装盘时一般将葱姜挑出,并掺杂炸好的米饼做点缀。
