Mix water, honey, olive oil and add yeast, let sit for 5 min to activate the yeast a little bit. Mix flour and salt in the stand mixer with dough hook on low, slowly add water. Let mix for 5 min or until fully incorporated. Oil a bowl, put dough ball in, cover tightly and let rise in the fridge for 24-72 hours. The longer the better.

When you pull the dough out, do so 4-12 hours before you're going to make the pizza. Separate in half and let it come to room temperature before you try to form it. Dust the bottom and the pizza peel liberally with cornmeal or flour so it doesn't stick trying to transfer it to the pizza stone.

Finally, preheat your oven with the stone in the middle rack at the max temp. It takes my oven a half hour to get to max (550 F) and I try to let it go another 15-20 past that so that the stone gets as hot as possible.
