130g self-raising flour or 130g plain flour + 1 teaspoon baking powder
125ml milk
2 tablespoons of butter (melted)
2 tablespoons of caster sugar
1 large egg

1. Weigh out all dry ingredients and add them to a bowl.
2. In a separate, bowl measure milk and add the butter to milk while mixing.
3. Whisk in the egg to the milk and butter mixture.
4. Add the wet ingredients to the dry and mix with a fork. Do NOT mix too much, only mix until it is all incorporated. Lumps are fine.
5. Put a frying pan on medium heat.
6. Add half a teaspoon of butter to pan and let it melt. Add however much mixture to pan, depending on the size of the pancake you want.
7. Repeat 6 and serve with whatever toppings you want.
