As someone of a similar age and many years doing all positions in multiple restaurants, it is your job to make it either absolutely clear to management when you will not be available (being specific about the time well in advance) or get your shift covered.

You can't just say "I have an interview coming up" you have to say, I will not be available on this day at this time and if you schedule me I will not be able to come in for that shift. You should preferably do this in writing, if not in writing you should tell multiple managers to make it clear to multiple people that you can't work that shift.

You don't just bring it up once and wait until the day of to notify them. If anything you should of sat down with your manager the moment you found out you were scheduled on that day to avoid situations like this.
