You die a lot cause you didn't utilize stats and skills optimally. Or because you are not using your equipment, attack types and items correctly.
Pick one weapon and defense type (dodge or block, put all your points into them. Choose attributes very carefully.Some are useless for certain weapons.
Pay attention to why you can't hit enemies. If enemy is dodging your attacks constantly, use aimed attacks against his legs to reduce his dodge chance, if your attacks are blocked use attack types that break armor or ones that avoid armor check like arterial strike.
None of the mainstream RPG that came out recently are hardcore or hard. They dont have mechanical depth or proper balance for this. This might come as surprise if you started gaming in recently as you'd have no other game for comparison. But if you try older, classic RPG, you'll realize new games are child's play.
