The zombies do not stop they will find you eventually. You can run and hide but it only buys you so much time.

You can mess with presets and set the zombies speed to slow or fast. You have a lot of options for the world you want. If you want something safer so you can build that's possible and if you want to make things hard on yourself that's also an option.
