Recipe for Monchou Cake with cherries [1]

• 2x Cream cheese bricks (250g each)
• Gelatin powder (around 20g needed)
• Graham crumbs (300 to 400g)
• White Caster sugar
• 1 pouch vanilla sugar
• 400 to 500ml of whipping cream
• Cherry pie filling (in jelly, sold in normal sized aluminium cans usually)
• Stick of butter

Materials
• Baking paper
• Springform cakepan (~22cm)

Preparation
1. Let cream cheese come to room temperature
2. Cover springform bottom with baking paper
3. Grease the sides and bottom of the pan with the stick of butter
4. Mix graham crumbs with warm, not melted butter (around 60 to 120ml) until not powdery anymore
5. Prepare the base by spreading the graham crumb mixture over the bottom of the pan
6. Mix soft cream cheese, Caster sugar and vanilla sugar in a bowl
7. Mix gelatin in water (150ml)
8. Clot the whipped cream with a mixer or by hand
9. Dissolve the gelatin mixture with hot water (150ml)
10. Mix dissolved gelatin in with the cream cheese mixture
11. Add stiffened whipped cream into the cream cheese mixture
12. Mix cream cheese mixture (mix by hand preferred to not denature gelatin structure)
13. Pour out cream cheese mixture in springform pan
14. Even out the cream cheese mixture
15. Put in fridge for at least 4 hours until settled (After this point you can put whatever part you want to save in the freezer.)
16. Pour the cherries in jelly over the cake just before serving
