Brazilian Codfish Stew Recipe:
Ingredients:
800g of desalted codfish
1 kg of boiled potatoes, sliced
Olive oil, black pepper, and salt to taste
3 onions, 4 tomatoes, half a red bell pepper, green bell pepper, and yellow bell pepper, all sliced
4 boiled eggs, halved
1 cup of black olives
2 tablespoons of chopped parsley
Preparation:
Cook the codfish for 15 minutes, then remove the bones and skin.
In a baking dish, place the potatoes seasoned with olive oil, pepper, and salt.
Add the codfish, onions, tomatoes, bell peppers, and more olive oil, pepper, and salt.
Bake covered with aluminum foil at 200°C (392°F) for 30 minutes, then remove the foil and let it brown for 10 minutes.
Finish with the eggs, olives, and parsley.
