I've never played any Catan game, because although it was a really big step forward for board games (from what I gather), it also has been improved upon and when I got into BGs (around 2009), it was already pretty old. As far as games my wife and I play by ourselves, we like Battle Line, Lost Cities, Carcassonne, Mystery Rummy Jack the Ripper, Crokinole (expensive), Dominion, Fjords, Ticket to Ride Nordic Countries (2-3 player TTR, great stuff)
For more than 2 players (but many of the games above are great with more than 2 as well!): Can't Stop, Tichu, For Sale, Bohnanza, The Resistance
Many of the games you have on your list I would recommend as well, but I didn't repeat them :)
