Iguana marinade:
1/2 cup white vinegar
1/2 cup lime juice
1 tbsp salt
1 tbsp pepper
Iguana Curry
Saut curry leaves and cinnamon leaves in oil 1 minute
Next add 1/2 yellow onion
2 tbsp curry powder
5 cloves of garlic
1 in grated ginger
1/2 tsp cayenne pepper
1 tbsp paprika
Cook for 3 minutes
Next add 1/2 cup sliced tomatoes
2lbs iguana meat( tail/leg)
1 red chili pepper
Combine then add 1/2 cup cocoa milk
Simmer 1 hour and serve
