The following commands will bind keys on the keyboard to different demo play back speeds. A speed of 0 is pause. Then, to be efficient, I bound all the different speeds in a row on the keyboard, so that I could just use four fingers to adjust the speed. You can fast forward, slow down, and pause.

bind "h" "demo_timescale 0"
bind "n" "demo_timescale 6"
bind "m" "demo_timescale 2"
bind "," "demo_timescale 1"
bind "." "demo_timescale 0.5"
bind "/" "demo_timescale 0.2"
