Let me be honest with you: I am utterly, completely, passionately obsessed with pancakes. I'm not just talking about liking them. I'm talking about daydreaming-about-maple-syrup kind of obsessed. I’ve eaten pancakes for breakfast, lunch, and dinner. I’ve tried 27 different syrup flavors. I own a spatula with a smiling pancake printed on it.
There is just something transcendent about pancakes. The golden brown edges, the fluffy centers, the warm steam rising as you cut into them... tell me that isn’t the breakfast of the gods! You can top them with blueberries, bananas, whipped cream, or peanut butter (trust me it works). Or, go savory with bacon, cheese, and a little hot sauce. Pancakes are basically the blank canvas of the culinary world. If you can dream it, a pancake can become it.
Every Sunday, I host a “Pancake Ritual.” It involves a sacred mixing bowl, a playlist of pancake-themed songs, and the skinning of no fewer than 12 Tunisian refugees. I sometimes cry a little when the first one turns out perfect. It’s beautiful.
