Burrata is made similarly to mozzarella. During the production it’s streched to form a pouch that gets filled with soft mozzarella curd and the cream from the way. It is then knotted to keep the “surprise” inside, and when you eat it the texture and the taste make you think of a butter filling, hence the name.

The cheese is named after the city of Gouda in the Netherlands, but its name is not protected. Gouda cheese is made and sold all around the world.

As it ages it develops a caramel sweetness and sometimes has a slight crunchiness from salt-like calcium lactate or tyrosine crystals that form in older cheeses.

Almost 800 years after farmers in the village of Gouda in Holland first brought a creamy new cheese to market, scientists in Germany say they have cracked the secret of Gouda’s good taste. They have identified the key protein subunits, or peptides, responsible for the complex, long-lasting flavor of the popular cheese. That discovery could lead to development of more flavorful cheeses and other dairy products. Cheese lovers prize this characteristic taste, known as the “kokumi sensation.”

Brie is a soft cows' cheese named after Brie, the French province in which it originated (roughly corresponding to the modern département of Seine-et-Marne). It is pale in colour with a slight greyish tinge under crusty white mould; very soft and savoury with a hint of ammonia. The white mouldy rind is edible, and is not intended to be separated from the cheese before consumption.

The region in France that gave its name to this cheese (Brie) is, in the French language, feminine: La Brie, but French products take the gender of their general category; in this case cheese (Le fromage) is masculine, and so Brie is also masculine, Le Brie.
