As for how to actually use the SDK, that's a bit more difficult to explain. We have a community-run modders' group on Discord that could help answer some of your questions. There's an invite in the readme of the mod tools if you're interested; otherwise you could continue to ask your questions here too.
There unfortunately aren't so many official tools yet. I know the guys in that discord use another version of stingray (the engine vermintide uses) to get some kind of asset authoring tools. The plan is to set up the full tool chain for modders too, but right now it's basically a compiler to compile assets and a tool for uploading mods to the workshop.
The next big step that's coming will be when we start giving full access to all source assets (which is plodding along), from there at least you'll be able to look at how existing stuff is set up and copy/mod them.
After this works and if nothing else more urgent pops up, the idea is to start working on making the full toolchain available.
