5120x1440 user here also. 2560x1440 game perfect in the center. Other stuff on the sides.

Look up Explorer Patcher. Change your "task bar" to windows 10 and then throw it to one of the sides of the screen. Then get Windows Power Toys, Fancy zone your monitor to sections. Then you can game with ease, no taskbar over your game :). Enjoy
