You can filter to INCLUDE VR games, but you can't filter to EXCLUDE VR games, and that should be an option.
I think it does help quite a bit... But if a game doesn't actually have "VR" as one of its genre tags it will still show up. And I suspect there are also at least some games that get filtered out despite only having VR as an optional feature even if the game isn't necessarily VR-exclusive.
Even so, if you want to do that as well... Click on your username in the far-ish top right of the Steam Client, Store Preferences, "Tags To Exclude". Sadly, I believe you can currently only have up to 10 genre tags in that list.
(Oh, and what Melt described might also be a way of adding genre tags to that list? Though those minus buttons might only be temporary for that search in particular, I've not used them before.)
