I'm just awful at it.
Although in Sins of a Solar Empire I liked the large battleships, since it's fun to watch them fight off a group of smaller ships.
Think either Tiberium War's Zone troopers or Red Alert's Tesla Troopers. Tends to be maneuvrable, although not fast, and pack the one-on-one punch nothing their size can deliver so reliably, commandos excluded. Tends to be weak against air due to all the restrictions.
In Tiberium Wars, they were also IMMUNE to small arms fire. So much fun to see a single squad of four cutting through entire militia units.
I like shock cav in Rome: Total War and its sequel as they can cause huge chain routes and are great for mopping up and enemy units after the battle.
I also like most experimental/ titans/ whatever the end game units are called as they show how far you've come from the beginning of the game when you were spewing out cheap units.
Hmm, what I like is a good strong cheap infantry which can inflict plenty of DPS. A excellent example would be the Marines from Starcraft.
