Steam and Xbox
This is killing me.

I've just spent the past 4 hours trying to unassociate Steam with some old Xbox account. I'm currently logged into Xbox on my account, then I open Steam, and I open Sea of Thieves on Steam, so I can play with friends, and it won't let me log in on my account. Google is useless. There's nothing in Steam settings to let me drop this old Xbox account, but SoT keeps opening up with this creepy old Xbox account. Creepy I say!

wth.

How do I play SoT, on Steam, with the Xbox account I want to be using?

Have to ask Xbox. Steam does not link accounts, its completely on Xbox's side. The link is on Xbox's end so steam knows nothing about it
steam can’t unlink xbox accounts, it’s all handled on microsoft’s side
you need to sign out of the xbox app and xbox live completely, then log in with the account you want before launching sea of thieves
if it still forces the old account, go to microsoft’s account settings page and remove the link there
only xbox support can fully reset which account is linked, steam has no control over it
You can call Microsoft support directly, and ask them to delete the account. I actually had to have them delete one. If you're not going to use it ever again. Your best off having them delete it. They have a nasty habit of charging dormant accounts for subscriptions that were cancelled.
