Don't worry about cutting/bulking, as you are a newbie and most likely don't need to do these things.
I'd personally recommend either 'Kyokushin karate' or 'Muay Thai'. Otherwise, get a book and practise at home, like the 'MCMAP' book[www.amazon.co.uk] or 'Complete Krav Maga'[www.amazon.co.uk], just to comb over the different fighting techniques.
Grab a copy of 'Strength Training Anatomy by Frederic Delavier'[www.amazon.co.uk]; it is the go-to bible for everyone who is serious about physical exercise (I use his books religiously). YouTube can be too schizophrenic to trust sometimes; this book will keep you on the right path and prevent injury and offer practical guidance for muscular development.
