Minecraft - not played it but the hours and mods and feedback says it is probably the most played.
Skyrim - haters going to hate because they are spoiled brats.

Skyrim would be my guess answer. How often do we see 'This game is better than Skyrim!'? I don't see any other game getting that kind of statement, and it's because none of those games made the same waves Skyrim did. Love it, or hate it, that game is often a center of discussion before so many others, and it is kept alive by mods.
My other guess answer would be Minecraft for similar reasons, but unlike Skyrim, it is more accessible with it's target audience being for kids, but also fun for adults, and also just being an easy game to run on a lot of hardware.
