Install any kind of Linux and install Steam on your computer and you've got essentially everything SteamOS has.
Valve has already mentioned they will eventually release a PC version of Steam OS but it won't be soon.
Not all games support SteamOS/Linux, especially quite a few MP games.
If Valve makes a "Steam OS" that's not based on Linux in some hypothetical future, not only will it not support the games that don't currently work on Linux, it likely won't support the games that do work on Linux either.
The good news is that back in reality, no matter what kind of Linux you're running, the list of games Steam can run is basically "anything that doesn't actively work to prevent Steam from running it on Linux".
Most of the games in that category can be summed up with one phrase: "windows kernel driver anticheat". If you want to play a game that isn't some online competitive deal, odds are pretty good that you can just do that with no extra steps.
