Option to Disable auto updates
Been asked many time and still not an option. My issue is with games like Stellaris, a 4x game so long lime frames to complete a game (months sometimes) are common. Some of us actually like to finish a game before starting anew with new updates. Jumping thru hoops to not update and not cause game crashes when trying to continue a game is annoying at best, makes you want to uninstall the game or even steam altogether at worst. Those of you who do not play games like Stellaris will not get the annoyance level.

Yes I can roll back to the version used in a saved game by jumping thru hoops sometimes (if not for those ways Stellaris would have been uninstalled permanently long ago) but having an option to NOT UPDATE unless specifically requested would be a huge relief from keeping track day to day if a game has updated and caused your saved games to become unplayable. This is not just 4x games but some single player games as well. BG3 I've had to restart games many times thanks to updates (not really even an option to not update that game).

Only update when I launch does not help, it does not stop these games from updating. Only going "Offline" helps sometimes.

I imagine this has been a waste of time because Steam appears to not care like every other company involved in computer/console games. You all want our money but only on "YOUR TERMS" 20 seconds of code is too much and would cost, what $50 for the programmers work and a 10kb update, oh boo hoo you all have updated stuff for less. I imagine you all are caught in a place where the developers force you to push the update if that's the case tell us don't just lock the thread and ignore our feedback.

As for completely stopping updates for games you have installed thats not really possible.
Unfortunately some games will begin updating while you're playing them, kicking you off(based on what I think you were saying above).
There is one global setting that may be of use...
Steam>Settings>Downloads>"Updates to installed games"
"Only update at game launch" is the best looking option from the pull-down menu. I do hope that stops updates while the game is running.
Also, updates happen when the developer makes an update. Its a good thing if they're fixing their software or adding new features that people might like. If they are pushing out patches too frequently so that you can't play the game then they probably know that and you should yell at them for that. Steam just sees if there is an update available and pushes it and won't let you launch without the latest version. If the devs make a beta branch available (game's properties tab) then maybe you could stay on the same version forever.
