I only want to get back one trade from Steam trade protection, but all trades within a week are canceled. How can I get back only the trade I want?

As far as I know, that's not possible.

What happens when I reverse trades?

When you choose to reverse trades, all trades containing Trade Protected items from the last 7 days will be reversed.
